June is Fresh Fruits and Vegetables Month

One of the best things about summer is the food. Seriously. There's BBQing, iced tea, lemonade and lots of fresh fruit and vegetables. Corn on the cob. Fresh tomatoes. Peaches. Cherries. Grapes. Pears. Salads. Ice cream. (Well, usually that's not exactly a vegetable, but sliced fruit over ice cream is delish and quick to serve!)

Prices are rock bottom and flavor is sky high. Okay, okay, you get the idea. I love summer food. I'm sorry, but even with modern growing & delivery methods, I have yet to find a decent watermelon in February. But in July? Heaven!

I did mention BBQ, right? In the interest of staying cool, almost everything can be fixed on the grill. Which seems faster to me. I mean, really. Marinate in the morning, grill in the evening. Cook an extra burger or two and have it for lunch the next day. Just plan your menus for efficiency and you'll spend less time prepping and cooking and more time around the table with those you love.

Mushroom Hamburgers On the Grill

Recipe: Mushroom Hamburgers
Use about 1 part mushrooms to 2 parts hamburger meat. We're providing measurements below, but if you follow the 1:2 idea, you'll be fine.)

6 oz. Mushrooms
12 oz. Ground beef
1 spash of soy sauce (about a TBS, but more or less depending on how much meat you're using.)
1 clove of garlic, minced

Chop mushrooms up really fine. I use a food processor, but you can do it manually if you prefer.

Add mushrooms to ground beef. Add the soy sauce and the garlic. Mix well. I literally do this part by hand. I know it's gooey, but it is the best way to get all ingredients incorporated. 

Form patties and grill. 

Variations: Use ground turkey or chicken, or even mix your meats. Add grated carrots, zucchini, onion. Melt some cheese on top.

Why bother? You'll get a delicious, flavorful, moist patty, full of nutritious things. It's a way to stretch your meat, and sneak in veggies. As far as the simple mushroom burger goes, if you keep it to a 1:2 proportion, you can hardly taste the mushrooms and the texture will be maintained.

Healthy Pancakes

Recipe: Miriam’s Healthy Pancakes

1/4 cup quick oats
1/4 cup wheat germ
1 cup whole wheat flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 Tablespoon oil (Canola, Corn etc.)
1 1/4 cups buttermilk
1 egg, lightly beaten
1/2 cup blueberries, or other fresh fruit in season (optional)

Whisk together dry ingredients. Combine liquid ingredients. Add wet ingredients to dry ingredients, stirring just until mixed.

If you have no buttermilk, you may use 1/4 cup buttermilk powder and 1 1/4 cups water.

Miriam says, “These light fluffy pancakes were the result of my grand-daughter and me putting together ingredients which we thought might work.”

Baked Bacon

For the best, most consistent bacon with the least fat. 

1 lb bacon (or more)

Place bacon strips on a rack over a sheet pan.  Bake in a 400ºF oven for 10-15 minutes or until they are done to your taste. Remove to paper towel lined plate.

Fresh Fruit Juice

Liquify fruit of your choice, citrus sections, pineapple chunks, berries etc, in a high speed blender.  Pour through a colander lined with dampened cheesecloth (to catch pulp and scum). Serve cold.
