This was a dish that my daughter-in-law brought to our Thanksgiving Dinner for a "pear-off". With these roasted pears, she won the friendly wager. Enjoy - it's easy, uses few ingredients and tastes delicious.
Roasted Pears with Brown Sugar and Vanilla Ice Cream
1/3 c. apple juice
1/3 c. firmly packed dark brown sugar
3 Tbs. butter
3 firm Bosc pears (those are the ones with the rough brown skin) peeled, halved, cored
Vanilla ice cream or whipped cream
- the oven to 400º. Arrange the pears cut side up in an 8-inch square glass baking dish.
Whisk the apple juice and sugar in a small heavy saucepan over medium high heat until the sugar dissolves. Whisk in the butter.
Pour the sauce over the pears. Bake until the pears are crisp tender and beginning to brown, basting occasionally with the juices. It'll take about 35 minutes.
Spoon the pears onto plates. Top with ice cream or whipped cream. Drizzle with any juices and serve.
