I saw an interesting recipe today, and decided to adapt it for our family taking into consideration the ingredients we already had available.
A couple of handy hints: If you can avoid a trip to the grocery store, your budget will thank you.

Crockpot Rosemary & Garlic Chicken
1 whole chicken
1 sprig of fresh rosemary
15 cloves of garlic
1 bag of baby, peeled carrots
8 potatoes, peeled and cut into chunks.
Brush the chicken with olive oil, and sprinkle it with paprika, chopped rosemary, salt and pepper. Put it in a 450º oven for 15 minutes, or until slightly browned on top. Remove from oven.
Place the baby carrots on the bottom of the crockpot. Place the chicken on top of the carrots. Add in the cloves of garlic. Cover the crockpot and cook on high for 2 hours.
After 2 hours, drizzle the peeled potatoes with more olive oil. Sprinkle with salt and pepper, and mix well. Add to the crock pot. Add sliced mushrooms if desired.
Continue cooking in the crockpot for 2-3 more hours on high. Serve warm, saving the juice to pour over the carrots and potatoes if desired.
